Ingredients:

110g / 4 oz feta cheese, drained and dried
90g / 3 oz cottage cheese, drained
1 egg, beaten
1 heaped tbsp fresh parsley, chopped
1 tbsp fresh mint leaves, chopped
salt and freshly ground black pepper (to taste)
4 sheets Jus-Rol filo pastry, completely thawed
110g / 4 oz melted butter

 

Method:

Preheat oven to 200°C/400°F/gas 6. Using a fork, thoroughly mix the feta and cottage cheese in a medium-sized bowl. Add the egg, parsley, mint and seasoning, then mix well.

Take one sheet of filo pastry and divide into three equal strips lengthways (keep the other sheets covered to prevent drying). Brush each strip lightly with melted butter. Place 2 teaspoons of the cheese filling towards the bottom right-hand corner of one of the strips. Fold that corner diagonally over towards the top left corner to make a small, neat triangle. Now take the bottom left-hand corner and fold it over towards the top right-hand corner. Repeat this process until all of the strip is incorporated and you have a firm neat triangle. Do this with the other two strips and then repeat the whole process with the other three sheets of pastry to make 12 triangles.

Place the triangles on buttered baking sheets and bake in the oven for 15–20 minutes until lightly golden and crisp. Transfer the triangles to a wire rack to cool slightly before serving warm.
